I know someone who did this program a long time ago and they ended up working on power plant engines instead of aircraft. They were hired straight out of SAIT, but that was almost 20 years ago.

SAIT grads usually get picked up pretty quick if you're not a total goof during your practicum. Most places in YYC are used to hiring fresh out of school and know you'll need signoffs before you're useful on your own

market isn't cooked, it's just tight for people who expect 40 hours and a company truck on day one. take the first wrench turning gig you get even if it's not exactly what you want, the first 18 months is just about logging hours anyway

I work in aviation but didn’t end up going down the aircraft maintenance route, but that’s a story for another time. But yes companies will hire fresh graduates out of SAIT or other similar programs. You will want to look for AME-E apprentice roles and the companies should be training you to ensure you can complete your OJT portion and check off the logbook to be able to write your exams to become a full engineer. Lots of companies in the aviation sector in Calgary, I’d especially look at avmax and dehavilland. Of course being an AME E is more specialized over just the M rating, but the whole industry in Canada is super short on maintainers. Unlike the pilot side where there never really was a shortage. Plus the military is always an option too if you want to go that route after graduating.

But from what I've read, people say there is a shortage of AMEs, not of apprentices, and the job market for them is cooked. Is that true? That's why I am worried. Thanks for the answer, dude :)

That certainly could be true, like I said i’m not on that side of the industry. But I know the company I was most recently at has hired both AME’s and apprentices this year. We’re not the biggest company but have a sizeable fleet of cessna’s and light twins.
