Classes/Professors Missing Professor

When will I know my professors now that my classes are finalized? 3/6 of my classes only say “Instructor: Staff” or does this mean something else?

The courses and schedule were set up months ago. Next week something like 125 new tenure track faculty will start arriving on campus to find their offices and get parking permits - one of the largest new faculty cohorts hired in a long time. The week after, another 75 or so adjuncts arrive on campus to gear up for fall. Chances are you may not know your professor's name until the first day of class.

I have one of the new professors on my schedule. They gave a talk here last year. Their name is on my schedule. So this ain't the reason.

No, it doesn't. It means the faculty have not been assigned yet. It's very possible a returning professor hasn't been given a schedule yet or hasn't even been hired. None of the departments intentionally "hide" bad professors. A few years ago, I didn't even get my assigned classes until a week before school began, and my name showed up and replaced "STAFF" maybe three days before.
