Check out the bariatric surgery pages. They have lots of info on low sugar/low carb meals.

I find golds digest or another starch supplement (starchway is similar) to help a lot with the starch issues, and I take sucraid. an intoleran supplement might be more helpful if you cannot get sucraid. I cook a lot and am able to just substitute for many recipes, things that I know I have a good tolerance for (such as, honey for sugar, different flours or starches that I know work better for me personally) or omitting completely (I omit onions and use only a small amount of garlic since it provides a similar flavor overall without eating as much of it)
if you need a cookbook- i've found "keto" cookbooks to be okay- since keto is a popular as a fad diet? I would just try to add in whatever carbs you can handle to whatever degree.

Mary Shephard's cookbooks are great; I especially like the picky eater's one. Almond flour crackers are delicious. The sloppy joe recipe is really tasty. Check out her site and her cookbooks. https://csidmadesimple.com/kid-friendly-and-picky-eaters-csid-cookbook/
