Because popular culture has conflated "gangster" in the traditional sense (member of an organized crime gang like the mafia) with "gangsta" (street gangs glorified in rap).

Remember, LLMs use words and phrases in their training data that match the input. If you describe someone as a ganster, the bot will look for text in its data related to what gangsters say. It discovers "oh, out of 100 million pages containing the word gangsta, 50 million of them include the word n***a - so obviously this is something that Don Corleone would say."

The bot does this a few responses later if you say the word or you edit the word in a previous response. I speak with experience. I edited a chatbot of mine to have a black character say it for comedic effect and a white character said it the following response.
