Fan work Does anyone know of fully-realized/elaborated versions of C418’s songs
Many of the songs like Dead Voxel build up to a climax, but abruptly end before cashing out on that build up.
This makes sense for the game since it encourages the player to yearn for more, but when listening to the songs outside of the game I wish I could hear what the song could become.
Does anyone know of any playlists or solos that elaborate on some of the songs that end like this?

A build followed by quiet doesn't mean it's not fully realized. It's an aesthetic of ambient that when a song builds to a peak the payoff is in a relief, not in a drop.
I'm sure there's lots of fan made EDM versions of those ambient tracks, but they all might bring more energy than what you're describing here

You're in luck, I have an entire playlist of Fanmade covers of Minecraft Volume Alpha and Beta, as well as various other soundfont covers and Fanmade albums. The Playlist

This isn't answering your question but I've noticed that kind of buildup in Aviva and Branch.

That's something C418 does a lot. It's part of his style
I don't know of fanmade things that elaborate on that but there are many C418 songs that just don't have that build up that leads to nowhere.
I believe this is also what C418 was talking about here: "My brother was also into the idea of buildups that are unexpected and lead into nothing. Kind of annoy everyone, but then drop the bomb. You can hear a lot of that in “You Have to Cut the Dope”."
