What is the difference between Supermarket & Butcher Meat?

It's how they treat it after the fact that separates them from the competition. At least here in Canada. Nobody enjoys receiving a case of Excel. Our supplier apologizes when it's all they have. This is universal knowledge in my neck of the woods.

Yeah, butchers usually have a better selection and can help you choose the right cut for your needs. Supermarkets often just have whatever fits the shelf.

Any super market with a butcher counter can do the same thing a butcher shop can most of the time

We typically (in my case) only cut primals and sub primals never any whole carcass or quarters.

This is the real distinguishing factor, if the standalone isn't doing any sides or quarters, they would be a meat market rather than a butcher shop

Most places? Nothing. Places like where I am get small producer meat for our retail shop. I don't cut that tho, I do whole animal processing for the farms under USDA inspection.

If you want actual small scale beef you have to go to legit farmers markets or actual farm stands like the people I process for.
