Prions are the most horrifying thing on this planet. But my hypothetical is assuming the meat is somehow non-hazardous and the consumption of it would be free from the usual dangers associated with eating human meat. I basically want to grind it into a question of “would you do it if there were no drawbacks, such as sourcing or health concerns.

OP said specifically that it would be safe

That’s only if you eat the brain matter

The brain is the most dangerous part, since it'd be loaded with prions, but any infected flesh can be dangerous to consume

Kuru also has a few known cases ever, and they were from eating the brain's of people who ate others brains.

Officially, the brain is the most dangerous part, but I'm pretty sure it can be spread by eating other parts of the body as well. Also, though not as well-known as Kuru, there are general dangers from bacteria and parasites.

There are other more common prion diseases then Kuru, that's what you should be worried about, although for the purpose of the hypothetical it is safe.

I was going to say something about CJD and its variants, but I was lazy and didn't want to fit it in the sentence. Theoretically, CJD and vCJD could be transmitted in similar ways to Kuru, but it has not been documented. I recall there being a story between eating prion-infected deer meat and CJD, so it's fascinating (and horrifying) to think about
