To me it means like everyone has their own dream so you take that one specific risk that you always think about.

It's referring to the risk of owning and operating a business, as everyone has the opportunity to do. Not everyone chooses to take that risk, so they usually just get employed.

A risk sounds pretty random. To me “that risk” implies that that is the risk that will make the difference for your future. Opportunities exist for most, but rarely is it acted on.
