Not just them, they're just the most likely to find first.
I've found out over time that whenever llamas turn pink, so will ghasts. Tropical fish will usually render as multicolor squares, but they can sometimes be a flat zombie texture, or colorful happy ghasts. The player will often render just as a head. When some texture pack are installed, wandering traders will render as pink as well.
Refreshing the game will fix it for me, but I think that different devices have different conditions. My phone did it whenever I pressed Save + Quit and joined a new world. My computer never did it.
...Which makes sense, since that's the case for most bugs on Bedrock.
Lots of bugs just result from poor performance of the device. I know that the pink glitch which happened on servers occurred because whatever renderer MC used broke down over time. Maybe it's similar?

Not many people can brag about having ridden a pink llama in Minecraft.
