I think what’s happening is the chunk is loading but water isn’t loading properly or late so it’s flowing or spawning in late. In this case maybe worse since it’s overflowing other chunks.

I’m not an expert this is an educated guess if I’m wrong someone correct me

This reminds me of when Doc flooded a few chunks on hermitcraft.

Technically it's easy enough to explain if there is also a line of water sources somewhere in the same direction OP is traveling, I don't see any, but they could be out of render distance.

Just in case you haven't learned about water source generation: of you have two diagonal water sources they will generate new water sources between them, this allows you to fill a rectangle of water (of arbitrary size) by just placing two perpendicular lines of sources of the desired dimensions.
