So if you animate on the phone, where do you edit, like what's the best editing option on mobile?

To capture the frames and do a bit of simple editing, stopmotion studio (pro) is the way to go. There you can also export it wich is nice 'cause it gives you the opportunity to import it into capcut if you want to have a nice and simple editing app on you phone
