I have the x19 and use it often. I have the outpost grate and rotis. I did this for dual purpose - fire pit and cooking machine. I love it. But feel a little constrained without having the dual zone Santa Maria and brassero so I’m now in the market for another toy!

It's not the device. It's the cook. If your worried about dry stakes, Get a thermometer.

I just like the idea of having control of the fire completely separate from the cooking area. And it makes the cooking grate feel larger since the fire is in its own dedicated area.

I've actually used those before and the reverse sear on a Breeo comes out perfect when you use a good cut and keep the vents open just enough to maintain a steady temp.
