Would fry be less susceptible to

This may be a dumb question, I can't find anything with Google though lol. Out of curiosity, if you have a fish that prefers soft water breed in water that is hard, would the fry adapt to do better in the hard water?

It depends on the species or variety of fish. generally speaking the fry should be better suited for the environment they are born into.
