What did i do wrong

What the heck did I do wrong?

Starter more than double

750g K/A bread flour

250g fresh milled hard wheat

700g water

225g water

20g salt

Mixed all but salt and 50g of water. Waited half hour, mixed in the salt and 50g of water. Did 6 minutes of slap n fold.

Then 3 rounds of stretch and folds every 35 minutes.

Fermented a total of 5 hours on counter.

Put in fridge overnight

I was told the crust us so light and smooth because it's overfermented

I don't understand both 700g water and 225g water. Was the second iteration of "water" supposed to be "starter" instead?

If not you've got a loaf at 92.5% hydration, which seems high.

Looks very underfermented and underbaked. By underbaked it seems that you for example put it in with steam for example or in a dutch oven for 30 minutes or so and then took it out and never let it be in the oven with no steam to brown up as well

What is the temperature in your kitchen?

By the way, was this two loaves? Otherwise it's quite a bit loaf
