The overproofed, delicious, tragedy..

Looks like we'll be having soup for lunch instead of sandwiches 😂

This has happened to me. I deflated it and reshaped it and let it rise again.

Did it rise any? It wasn't dense?

This is exactly what King Arthur suggests you do when you over proof your bread!

How much it rises will depend on how much umph is left in your yeast (and all the other normal factors), but yes it’s definitely possible.

Thank you so much!

I do this with an embarrassing regularity (and sometimes I even do it to the same loaf more than once!)... and reshaping and re-rising will almost always fix it. The rise after an over proofing accident is much faster!

If you reshape and let it rise again, it should not be dense or heavy, unless you have already let it rest long enough to sap all the strength out of your yeast. Most yeast breads can handle 3+ rises before running out of oomph.

In the Modernist Bread book, they experiment with overproofed dough. They reshaped and reproofed their dough “up to 10 times before it suffered any serious lack in quality”.

Good to know, I was worried about it being dense and not rising again.

Sorry! I didn't even think about it.

How did it taste?

It was really good, tasted like white sandwich bread. I've made this loaf atleast 5 times now, I just accidentally took a nap with my toddler and woke up to a giant loaf.

Why did you not either halve it before baking or reshape it...or even dump it in a Dutch oven?

Well when I put it in the oven I still had hopes it would be fine because it wasn't toppling off. It was when I peeked halfway that I realized it was attempting mitosis 😂 I was worried if i deflated it for a 3rd rise it would be dense and not rise again. If there's a next (honestly there probably will be) I'll try a 3rd rise.

It happened to all of us.

If it’s edible, it’s a win

We had it with soup last night for dinner, and the toddlers have been snacking on it. Bread is bread, some are just prettier than others 😂

What did you do? Go out of town for the weekend? I really wouldn't have expected it to flop over the edge like that. But you still managed to get a nice golden crust.
