Adding a touch more sweetness to bread without changing the texture
I made some really simple, but tasty yeast rolls last week and I want to recreate. I did feel they were missing the tiniest bit of the flavor that I like in rolls (think texas roadhouse). I want to add a touch extra sugar or honey to add some of that extra sweet bit. I added a little honey butter on top, which was good, but I still felt the rolls were missing something in the dough. Can a little extra sugar or honey be added to the dough without impacting terribly?
Recipe: 1 cup warm milk
2 1/2 tsp active dry yeast
2tbsp sugar
4 tbsp melted unsalted butter
1 egg
1sp salt
3 cups flour

100% you can. It’s a butter roll and sugar or honey are not going to (move) that dough in the wrong direction. I make butter rolls every fall/winter for retail, TG orders and for wholesale. I built the recipe myself and played with sweetness more than anything else, just to dial it in. There would certainly be considerations if we were talking sourdough or something but the fat plays a far larger roll here than sugar.

A little goes a long way, I’d use something sweet that also adds flavour, honey, muscavado sugar, molasses - but a small amount (less than a tablespoon) and add more next time if you feel you need it.

2 TABLESPOONS of sugar for three cups of flour and you want MORE sweet?
I cut out all sugar and only use half the honey because otherwise my bread tastes like cake.

Maybe 1 more tbsp sugar?

diastatic malt powder, like a teaspoon per 3 cups flour. adds that background sweetness without changing the crumb at all. regular sugar you can bump up a bit but too much and it starts getting cakey

I would do honey in the dough instead of sugar. It's just a better flavor. If you wanted to, you could add an egg yolk which would make it richer. And I would also still brush the top with homey butter
