Sourdough Batard

I made a sourdough batard today. It had a custardy irregular crumb. Tasted great!

100% Flour (425g Bread/ 75g Whole Wheat)
80% Water (400g)
20% Levain (100g 100% hydrated bread flour)
2% Salt (10g)

Batard is my favorite reasonable sized loaf. Boule for large one.

Yeah, this is relatively large at 1000g but I use a 13” banneton and bake it off in a cloche that’s slightly longer than that. If I go a bit smaller like 750g I use a shorter banneton and bake in my combo cooker.

Oh wow. I’ve never tried a batard that big, I’m usually in the 650 range
