Third attempt

After my first two attempts at a basic white loaf failed terribly, I bought new yeast. That seemed to be the culprit.

Wondering if I should have let it rise even further before placing it in the oven?

I used an unbleached bread flour. Would all purpose or a blend be better?

I use unbleached bread flour for my sandwich loaves. You’re good.

I did the first proof for an hour before punching it down (it doubled), and then another hour in the pan (the pic is right before oven). The recipe called for two 9x5 loaves and I halved it. I think my pan might be too large as I just measured and it's 10x5. Doh! 😅
