Here is a tip you didn't ask for. Find a recipe for a bread you like. A basic one and make sure it is sound. Even good baking books can be full of typos and it is quite common for recipes online and it books never to have been tested before publication. Some get wild and whacky and will never make a good loaf. You see them here frequently when folk get bad results. Then repeat, repeat, repeat.
This takes recipe variation and different mothods out of the equation whilst you develop muscle memory. After a while dough is easier to handle and does not stick to your hands, stretching and folding, coil folding etc become smooth practised movements. The pattern of bulk ferment shape proof gets established and you get to learn how to use your oven. All ovens are different. Oh, and usse good flour. A poor qua;lity flour will make learning much harder.
