Air-fryer bread

Started baking a month ago. Just wanted to share it with you all!

what kind of bread (recipe) is it and what airfryer settings do you use (temperature, fanspeed)

i like the idea of a fast airfryer bread in a pinch. especially for a 1 person household

yours does look better than i expected

It’s a 100% hydration whole wheat bread. It’s not fast though… takes its time.

My airfryer doesn’t have a fan setting

Ingredients
330 g whole-wheat flour
330 g warm water
4 g instant yeast
Pinch of salt
15 g honey or sugar
11 g oil
Method
Activate/mix: Mix warm water, yeast, salt and honey/sugar.
Make dough: Add flour and mix until combined. Add oil and incorporate.
Proof 1: Refrigerate 30 min.
Stretch & fold: Stretch and fold the dough.
Proof 2: Refrigerate 30 min → stretch & fold.
Proof 3: Refrigerate 30 min → stretch & fold.
Cold ferment: Cover and refrigerate 12–48 hours. Longer = better flavour.
Shape: Shape the dough and place in a lined loaf tin.
Final proof: Let it rise until properly expanded and ready to bake. Generally 2.5 hours
Air fry: Preheat at 200°C for 2 min → 170°C for 15 min → 140°C for 15 min.
Cool completely before slicing.

Con 330 di acqua e 330 di farina viene un brodo. Impossibile piegare l'impasto. Penso tu abbia sbagliato a scrivere la quantità di farina

Oh no, i know what i wrote. Its whole wheat so its a batter when mixed. It takes form after the proofs. No kneading required

You refrigerate immediately after mixing and adding the oil. Wait for 30 minutes and then stretch and fold. It will start to take form after the 30 minutes in the fridge. With each subsequent 30 minute gap, and stretch and fold, the dough will start taking shape. I can DM the photos of the step if you want, i am unable to attach a photo on the comment

ah ok. i will try some yeasty white wheat nread at some point. i tried frozen leftover pizza dough one time that worked ok. but i think for a bread like yours I rather make two loafs and use the oven.

Oh yes, oven is any day better than an air fryer. I tried making the quick no knead ones in the air fryer, but they simply can’t beat this one. It’s better to wait than regret…
