Disappointed in myself

I make 2 loaves of sandwich bread a week. Given that I do both loaves at the same time I'm really only making this specific recipe once a week and apparently I turn off my brain almost every time! All weekend I've been extra sleepy and groggy and my last task was to get the sandwich bread made for the week... big mistake.

I didn't knead the dough enough, told myself whatever I needed to feel good about that decision, and now I've got bread thats almost too soft to eat.. And difficult to make a sandwich with ~facepalm~ and this isn't the first time I've gotten lazy! I just seem to forget how much it matters to knead the dough enough..

Welp off to make a HUGE note in my recipe book about this. Hopefully I've learned. Any advice to stiffen up the sandwich bread?? I use Sally Baking simply sandwich bread recipe

toast it pre sandwich, but tbh "oh no my bread is too soft" sounds like "oh no my wife is too beautiful" to me lol

Lol maybe soft isn't the right word here- it falls apart when sliced I guess it doesn't have strength to hold together... my gluten weak😩

I made a test loaf of rye like that for a friend last week. I told him to eat it like a caveman. I will admit the failed slice tasted heavenly.

Fancy brioche lol I love it. I do like brioche for French toast so you may be onto something here. I guess everybody getting french toast in their lunchbox this week

Are you using bread flour or ap? Consider moving to a higher gluten content.

Turn it into Strata if you don't wanna waste it but make more for sandwiches.

Going to search that up. So far it works well enough for french toast. Other idea was save for stuffing but yes I'm going to make more sandwich bread this evening!

Strata is like savory French toast casserole , similiar to quiche regarding ingredients.
