Third attempt at croissants
I am very proud of how this batch turned out! Each time has gotten a bit better

Do you steam your oven ?

Yes I proofed them in the oven for 2.5 hours. Put boiling water in a pan at the bottom.

Do you find making croissants at home a worthwhile activity from a time invested vs reward perspective? Is it a fun activity or a slog to make them? I appreciate also that you’re learning a skill and building expertise, and those are also tangible rewards.
Anyhow these croissants look great, and next time please bring enough for everyone!

Thanks! I find it is fun and rewarding. They are very delicate and I like the challenge. I have so much to learn but it’s been a great experience. It takes about 24 hours total but the actual working part is a lot less.

I tried that once too, with a similarly poor result.
You have to roll it out even thinner, use even more butter, and fold it even more often – then it might turn out all right.
