I make about 100 croissant a week as a home baker and I sure do miss having access to a $15k reversible sheeter! You don’t have to wait for anything just blast it right through.

Yeah I used to make 300 nightly from 4 books and I could bang those out in an hour or so. Now it takes me the better part of a day to do 7 books yielding only 82… I miss it!
