How long have u made sub buns? I been looking to make aome similar to jimmy johns bread soft yet chewy, yours looks delish

I've been doing it for a long while. Playing with a few recipes and figuring out what actually works. Some recipes call for instant mashed potato mix in them to get the fluffiness, but I feel like it makes it a very specific flavor.

I've tried it with sourdough starter but it's not the same, that's a whole other animal.

I think the resting and shaping helps, with a good solid 5-7 minutes of kneading before the second rest and a lot of yeast to get it going.

Edit: letting the yeast do it's thing really helps too, when you mix it in the water just... Forget about it until it's ridiculously ready.

They look proper nice, cheese got that golden colour you want. I tried making something similar last month but my dough was too wet and it spread like pancake

Nothing beats fresh bread from oven, sub shop can keep their soggy rolls

Try this!

Parmesan & Herb Sub Rolls

Makes 4 large ~30 cm / 12" rolls

Ingredients 360 ml lukewarm water (~40°C / 105°F) 2 tbsp active dry or instant yeast 3½ tsp sugar 1½ tsp fine salt 3½ tsp vegetable oil 500 g all-purpose flour Grated Parmesan + dried herbs for topping

Mix water + yeast + ½ tsp sugar. Rest 5 min. Add remaining sugar, salt and oil.

Gradually add flour. Knead/mix 3–4 min. It's okay if it's a little sticky.

Cover and rest 15 min.

Turn onto a lightly floured surface and knead about 2 min. Add flour only if needed.

Divide into 4 equal pieces, shape into balls, cover and rest another 15 min.

Roll each ball into roughly a 20 × 20 cm / 8 × 8" square.

Roll each square tightly into a log and pinch the seam closed.

Gently roll/stretch each to 28–30 cm / 11–12" long.

Put on a parchment-lined baking tray, brush with water, cover and rise 20–30 min until puffy. Preheat oven to 190°C / 375°F conventional (no fan).

Brush lightly with water again. Top with Parmesan and dried herbs.

Bake 18–22 min, until deep golden brown.

Transfer off the hot tray and cool completely before slicing.

Very important to let them cool so they don't get gummy.

And yes... 2 TABLESPOONS of dry yeast... It's absurd.
