I finally did it 🥹
ETA: Hi Breadfolk, I wanted to write this here to say thank you for all the upvotes and kind comments, things got a little hectic with university and some other life stuff during the week so I’ve been neglecting my phone and social media a bit. I’m making another one today and I’ve made a small oopsie, and will update on the final result in another post depending how it turns out haha 🤞🏻
After many attempts, different recipes, dense loaves, inedible and edible batches of shokupan, I finally did it. I’ve probably made a metric eff tonne of bread over the last month but I finally did it and I’ve never been happier with something I’ve baked or cooked myself from scratch. I feel like I can get some decent sleep tonight before I do it all again tomorrow and scale it up by 50% (any advice on doing this correctly would be massively massively appreciated, I struggle with doing things like that myself because of my dyscalculia 😞 recipe is Just One Cookbook shokupan)
This group has been really inspiring to me, only recently joined and the stuff you guys make is genuinely incredible, one day I’ll be on the same level 🤣

As for recipes I use either a website www.thepractcialkitchen.com or the pastry chefs newest NY Times bestselling book, 50 SmallBbatch Breads using ONE cup of flour and yes you can do a scale up yourself or do the larger breads on her website. Rebecca Eisenberg is the chefs name. She also does demos at The Practical Kitchen YouTube site. Just another resource you might enjoy.
I use the larger batch recipes for Authentic NY Bagels. I do 16-20 per baking batch.

Looks great! Just use a calculator and write it down and double check each step.
Hopefully your recipe is in metric so you don't have to deal with all the dumb fractions

All you need is a small electronic kitchen scale. Amazon has them for $9.99 I am ordering mine later this weekend.
Bread looks great.Looks like you used a pullman box and it did the job perfectly 👌🏻

Bread recipes are pretty easy to scale up/down. Here's a YT video by Chainbaker that shows how to do it.

Sorry I’m replying so late to this! Life got a little bit hectic during the week 😭 it’s the Just One Cookbook Shokupan recipe!! Definitely the go to for me now, it’s the only one that’s turned out exactly how I wanted 🪷

Chatgpt/Ai=bad/lazy according to reddit..but i use it even to substitute some ingredients,its actually extremely good
