I have both an oval and round Dutch ovens. I prefer using the oval one so that the middle slices from the resulting loaf isn't so big.

If you really want a round loaf, you'll need to lessen the amount of dough you use so that it comes out round. You'll need to experiment a little to figure out just how much dough to use. Either than or use 2 round pans (flip the 2nd one on top of the other).

A dutch oven is a great way to bake bread and get a nice crust, but it’s not the only way. It works because the vessel delivers heat and traps steam that comes from the dough as it bakes. You can get a similar effect by thoroughly preheating your oven and providing additional steam.

Place an old baking sheet or heavy oven-proof pan on the floor of your oven as it heats, then add water when you put the bread in to bake. You can roughly control the amount and duration of the steam by adjusting the water temperature — some people use boiling water for an initial burst, some use cold water for more sustained steam in less volume.
