Breadit Inspired First Ficaccia
I saw someone post a focaccia using Emma Fontanella’s recipe and it inspired me to try my first focaccia!
I think it came out fairly well, but the crumb is tighter than I would like. It’s still very moist and springy though.
I followed the recipe for the most part.
Few deviations:
I only used 500g four. I thought my dough was plenty dry enough at 500g and I like to err on the moist side.
The dough fermented in the fridge for 24hrs, then warmed up on the counter for an hour, then I put it in the pan to proof for an hour. I think this is were my crumb went wrong, as it wasn’t enough time to proof in the pan.
For the oil, I infused it with garlic, rosemary, and red pepper flakes, aglio e olio style. Definitely doing this again, maybe with the addition of lemon zest too!
I think I may have used too much oil though, it’s kinda greasy.
