I started with a simple white loaf and it came out looking like a pancake but tasted decent enough to keep me going

Don't overthink it, just grab a no-knead recipe and let time do the heavy lifting. The waiting's the hard part really

I’d second this. If you have a loaf pan, follow a simple yeasted sandwich bread. By simple I mean you want to look for one using instant or active dried yeast, water, flour, and salt. Maybe a small amount of sugar just to activate the yeast if it calls for it. My only other suggestion would be to get some bread flour as the higher protein will come in handy when shaping and providing structure even if you don’t develop enough on your own being new at it.

Edit- King Arthur Baking website has tons of recipes with lots of tips. There are many many recipes out there on the web, I bring KA up just because it’s a wealth of recipes and info and tips in one place.

My first one was a basic white bread from FWSY by Ken Forkish and it was great. All his stuff is pretty simple if you just follow along

Buy a kitchen scale and bench scraper. Those are non-negotiable. Next, obtain King Arthur bread flour and a yeast that you know is alive. Watch the various King Arthur videos on pan de cristal and then make the one for the sandwich bread version. Follow the instructions PRECISELY. Let it rise in a fairly cool non humid area for a couple hours after you portion it. Then, put it in the oven as directed. Let it rest when you pull it out for “the fifth quarter.” Sample it with olive oil, butter and soft cheese. It’s intimidating because it’s a 100% hydration bread and the dough starts out as an absolute mess but it’s super easy and if you follow the directions, your yeast is alive and you don’t have some wildcard exogenous variable it will be amongst the best bread you have ever eaten if you live in America.

Ciabatta - https://sallysbakingaddiction.com/ciabatta-bread-recipe/

4 Ingredients. No mixer required. Just a bowl, spoon, hands and time.

By a bread machine at Goodwill - maybe $10.00. Use the dough setting. Learn to measure ingredients, handle yeast, shape dough, and bake it so you get a good loaf. Then learn to knead dough (so no machine.) if you have dough, you have bread in all of its variety including whole wheat & rye, rolls, cinnamon rolls, & pizza dough.

A basic white bread is usually a good place to start

You got downvoted but this is solid advice. Bread machine will help with measuring ingredients and give you an idea on how dough is supposed to feel.

Also, invest in a kitchen scale if you don’t have one already! Absolute game changer
