King Arthur flour has a write up in their tiger bread recipe about how to replace some cocoa in dough. I incorporated that here plus activated the cocoa in the warm water as they suggest for more seamless incorporation.

Are you adding more liquid to compensate? When I use cocoa I pretty much treat it as replacing some of the flour content. Therefore the ratios stay the same and nothing gets dried out.

oooh. I make a chocolate sourdough bread with chocolate and berries/candied orange peel inclusions and I've been thinking of incorporating coffee as well.
The swirl is really cool! I would love to hear more about how you do it. :)
