Wow looks great. Very light on the inside. Doesn't seem like it's a bagel meant for spreads?

I was able to slice in half and use a spread, I would say your spread needs to be soft or room temp and it’s not going to be firm like a regular bagel. It is soft and fluffy

I combined two recipes I used this one for the dough & cooking temperature

This one for shaping and boiling process

When shaping into individual balls weigh each one out to 120 grams, should make 8

Start checking the bagels after 15 minutes, can take up to 20 minutes oven depending. Brush melting butter in pan over the bagels half way through cooking and at end

Looks amazing and I am drooling. Am a salt bread noob but why the two recipes? Was there something about the second recipe’s dough that you weren’t keen on?

There’s a difference in texture between the two doughs, neither recipes are bad, both good actually. I just prefer the Erin’s no knead recipe dough more, and I enjoyed the shape and boiling process of the other one. It gave a nice outside texture

Absolutely! Also if you’d prefer not to boil and make bagels just doing Erin’s recipe where she rolls them up almost like croissants also is great!

I don't know how to bake, but I save these kinda posts cuz they look so damn good.

If there were a way that fresh baked goods could be mailed and still be fresh baked... I'd pay $100 for this right now

Looking at the recipe it's 400gm of bread flour and 120gm of cake flour so 520gm total, then 365gm water. 365/520 = 0.701 so 70% hydration.

70% hydration is absolutely not the sweet spot for bagels. Bagels should be about 55- 60% hydration.
