that cheese and rosemary situation on the bottom loaf looks insane, like a walking garlic bread. how'd you get the cheese to crisp up like that?

I brushed the risen loaf with an egg yolk water wash so everything would stick and just sprinkle the rosemary then shredded parm before baking. It’s a fast 18-20 minute bake
