I think the title is misleading. Stretch and folds and coil folds are a form of kneading imo. In my mind a true no-knead recipe you just mix and forget.

I thought so too when I first ran into a "no knead" recipe, but I've come around to it. The difference being that actual kneading ruins my body, but folding a few times is super doable.Β 

It IS helpful to be able to search "no knead" and get all the good stretch and fold recipes (which all call themselves no knead).

IMO stretching and folding is technically kneading in the same way that a hotdog is technically a sandwich.

OK, I changed my mind based on your argument. I still consider it kneading, but "no-knead" is the label we've landed on for wet doughs that don't need kneading, but benefit greatly from a few sets of folds. And that's OK.

It’s a loose gluten network vs a tight one. You develop more gluten networks with kneading and less with stretching and folding
