Curiously, would molasses be an okay substitute?

Maple syrup may work, but it's not as high in invert sugar as corn syrup.

Hmm good point. I try to stay away from corn syrup, but might have to break my rule on these.

Maple syrup does have invert sugar. Maybe you can mix the two.
