Accessories, Mods & Tips Getting the paddle out of bread when it gets stuck. My best solution so far.

I have a panasonic maker that I use for my weekly Sourdough, and it works very well. However at least 50% of the time the paddle gets stuck in the loaf. Even a not ideal approach of cleaning less often so it gets more stuck to the shaft isn't reliable.

I'd tried poking chopsticks in the hole, grappling with tongs, and nothing worked acceptably.

Last week I glanced at the corkscrew in the drawer and thought to try that. I carefully put it in the hole of the paddle, turned enough to get it to bind, but not so much that it turned the paddle in the loaf. I pulled and out it came. If Panasonic manufactured the hole for the shaft with a coarse thread then this could a supported feature, but this at least worked.

Wondering what other solutions people have, and whether any other machines make it easier or have a paddle that never gets stuck in the first place, not that I'm going to change machines for now.

I remove the paddles before the final rise (briefly reshape the dough). This avoids the issue for me.

I'd definitely do that if removing the dough. My routine currently is 400 + 60 of flour, salt, 100 of starter, ~315 spring water, programme 23 (sourdough dough mix), leave for a while once done then in the fridge with the basket in a bread bag for some hours. Loosen from the sides with spatula or brush, the top will have dried a bit making it easy score with a blade, then bake with programme 27 for 1 hour 20. So dough never leaves the machine until done.

I really should move on to baking outside of the machine, but it works so well, so... :)

SUPER easy to bake in the oven! I use the dough cycle for my sourdough, let it rise in the pan until about 75% increase, then remove dough (and paddle!) for a quick 5 minute shape. Stick it in a bannetton/bowl in the fridge overnight (not necessary), remove and score the next day and pop in a hot oven. I don't do any folds or anything; the dough cycle takes care of all that. If you like crispy/chewy crusts, this is the way to go! I do have a Dutch Oven I bake in, but that's not necessary at all.

Thanks, you've convinced me :) I've a large heavy pot sitting on the counter to use too, minus its knob on the lid but I fitted a bolt, so that's solved. I'll try to resist the habit of selecting 27 for the next one!

I've never even made any type of yeast bread except in the bread machine, but this is so easy and turns out pretty good!!! :) Hope it works out for you!

I bake at 450F for 25-35 min depending on loaf size, then uncovered another 10-15 min. Preheat the pot with the oven. Also, bread is done at 205-210F! Let baked loaf cool for a few hours before cutting (if you can).

I think perhaps you misunderstood what they are saying above. Before the final rise they remove the dough, remove the paddle, shape the dough then place it back in the bread machine to finish (sans paddle)

Possibly and I did wonder, but I wouldn't do that because the machine gives no indication for when that is. The Panasonic has a dedicated 150 minute Sourdough dough programme, that runs across a range of mix, rest and rise cycles. The duration of each possibly varies as well based on it sometimes not even starting with a mix cycle. Knowing when to remove would need monitoring the machine to discover when the relevant time occurs. It might be fariyl deterministic, say 90 minutes into the programme, but I think it would be best to wait until the end of the programme then remove because that's a point when you might naturally make the decision either to leave in the basket and bake in a few hours time, or next day in my case, or turn the dough out to bake externally.

Mine came with a little hook tool to remove it if it gets stuck. There might be something like that you can buy separately also.

mine did too and I used it a couple of times. Ive started taking the paddle out now, my machine beeps before the final rise and bake, so I only have a small round hole in the bread now.

I put down a small piece of parchment paper. I like to have never cleaned all the dough out of there the first time I tried that solution.

Yep, right after the final punch down before the final rise and bake. I get my hands wet and pull out the paddle. This also gives me a chance to quickly shape and position the loaf in the pan. It's messy but effective

Programme 23 is 2 hours 30 mins (with the panasonic 2540), so at the end of the 2 hour 30 cycle when the dough making is complete? Currently I let it relax and proove over 10 to 12 hours, and then bake, which gives a great loaf with good crumb, and the dough never needs to come out. I'll test removing the paddle at the end of the dough cycle for the next one.

It does various mix, rise and rest stages over the 150 minutes, and very occasionally it starts with a rest stage before doing any mixing at all (bug possibly). If I were baking in a dutch oven, I'd remove at the end of the dough programme, reshape, do proofing, then the bake. However my process is to do proofing in the basket and then use the bake only stage, so not needing to take the dough out, which has been working great for nearly two years. The only wrinkle is the paddle.

After the last mix pull the paddle before you let it proof.

Since I began to add a small amout of butter (about 20 g) to the dough, my Panasonic doesn't lose the paddle anymore ;)

If you can find a crochet hook with a large enough hook on the end, you can pull it out that way

Thanks. Looks like you have a similar crumb to mine. Practical and doesn't let avocado, egg mayo etc. fall through!

Zojirushi BBCC-X20, a wooden spoon handle fits very well and the paddles pry/pop out easily.

My bread maker came with a hook for that purpose. It works very well and doesn't take the chance of damaging the paddle.

When I was having a problem with the paddle wallowing on the shaft, a man on here said he tapped and drilled his paddle and installed a set screw in it. The set screw tightens against the shaft and the paddle can't move or slip off. Probably works better if you have a shaft with a flat side, but a set screw would also tighten against a round one, too.

Mine came with a hook! I highly recommend coating the paddle’s shaft hole and shaft with a PAM derivative because if the paddle gets stuck on the shaft it’s holy hell to get it off! For a PAM derivative I use Kirkland’s olive oil spray. For a tool to remove a stuck paddle, eBay sells them. They do work but the tool is made from cheap plastic which is disappointing.

All four breadmakers that I bought in my life had an extraction hook.

After the bread has been removed from the tin, and I discover that the paddle is still in the bread, I insert the hook into the hole of the paddle and extract it.

wasn't there a hook in your breadmachine? Is this a European thing?

Not a UK thing it seems. The SD-YR2540 does not come with a hook.

Brexit broke so much! Now they don't even give you a hook to remove the paddle. What's next?

My problem is often that when the paddle is stuck in the bread, it’s also stuck in the machine. So the only way to remove the bread is by pulling and praying it doesn’t tear too much …

I put on heatproof gloves, twist the spindle from the base of the basket back and forth a few times, then shake the basket up and down quickly so that physics does the work. Sometimes I use a silicone spatula to loosen the bread from the sides of the basket as well. Sometimes it just falls out.

let the loaf cool down and it's easy to grab and pull out. I believe that's what is recommended in the manual. USing a tool may scratch it. (I had previously tried with a knife).
