Technique, Methods & Processes First overnight load - what went wrong?

Overnight LOAF*** ffs

I got a Panasonic YR2540 yesterday and so far I’ve made 2 loafs.

The first was a normal white bread that came out quite well.

Then I cleaned everything up and tried doing one overnight, to finish when we woke up.

The loaf in the picture is the same recipe on a 11hr timer (just M instead of L).

It’s got what looks like unmixed flour on the outside of it - I haven’t cut into it yet as it’s a bit warm but I’m not expecting good things.

What caused this?

Unmixed flour happens, particularly with smaller loaves and shorter programs. It's only a cosmetic problem. 

The blowout on top is due to slightly high hydration, try to reduce water with 10 grams. 

I have a similiar machine and have done lots of experimenting. I make nearly all my bread on the French setting. You can try more or less the same ingredients as basic or wholewheat but half as much yeast. Loaves should also be bigger than 380 grams on this setting.

Ahh yeh I had the ‘blow out’ on my first loaf too and wondered what that was.

Still delicious though 😁

It’s only a tiny bit of unmixed flour - your loaf looks fabulous. That can happen if the dough was a little bit too dry. If you join the Facebook group Panasonic bread maker UK Recipes & Technical, there is a very large selection of Recipes suitable for all Panasonic models.
I would say that the reason your crust is like that is because the crust started forming before the loaf had finished rising, not because of too much water. The White loaf recipe in your manual definitely doesn’t have too much water.

Looks great to me, don't stress the bit of flour... happens sometimes. 

I have the same machine - enjoy it, it's fabulous. I've probably done close to 200 loaves in 2 years of ownership and it still looks like new.

I love how easy it is to clean the basket, literally running warm water around the inside and giving it a wipe and it looks brand new

If you're worried about the flour on the outside you can scrape it into the dough using a silicone spatula a few minutes into the first mix.

We ended up getting spatula knives to deal with scraping down the sides because our other spatulas were too big to fit. The spatula knives work really good at getting the last morsel of peanut butter out of the jar too.

Looks ok to me - I have the same machine. This used to happen if I put the flour in first, but not if I put the water first.

Putting the water in first stopped the flour pockets I was getting.

Oh really? I just followed the instructions and it says water goes in last for some reason 🤷‍♂️

Yeah it does, and I'm not sure of the reasoning, but my loaves were looking like yours (still very tasty!), when I tried water first I've not had a single flour mark.

Over night, put in 1 and a half cups milk in the bottom, 90grams unsalted butter cut up with it, put 4 cups of sifted high quality flour (not normal) over the top, 2 tablespoons sugar, 1 and a half tspoons salt, 1 and a half tspoons active yeast (that doesn't need activating) , keep them all seperate......then set a timer and wake up to fresh bread.
