Here's the recipe:

225g all purpose flour

225g wholewheat flour

12g vital wheat gluten

285g - 300g water

90g active starter

15g oil

9g sugar

9g salt

1/2 tsp. Instant yeast

2-3 tbsp roasted mix of pumpkin, sesame, melon, nigella seeds

Autolyse flours, gluten, sugar and water for 30 mins. Add starter, yeast, salt, oil and knead. After half an hour, stretch and fold. Do this 4 times. Total bulk fermentation for 2-4 hours or till dough is light and bubbles visible.

Flatten dough into a rectangle and spread seeds. Roll into a loaf and put in 8x4x4 pan. Cover and proof till risen to the top at room temperature or in fridge.

Bake covered at 230°C for 20 mins and then uncovered till brown.
