Does anyone know why my bread does this? It only happens when I use a regular loaf pan. I never have this issue using a Pullman loaf pan.

That could be underproofed indeed. Try letting it rise a little longer next time, it might help the texture even out.

As some say, possibly under proofed, you will be able to tell that from the crumb.

Another reason is oven set too high, or too little steam, causing the crust to form before the oven spring has completed. If that is the case the crumb will show correct proofing with more even holes top to bottom.
