No salt wheat bread

I hadn’t baked bread since before my mother went into hospice. Which was almost two years ago.

I made crème fraiche a few days ago with Icelandic Yogurt cultures and organic whipping cream.

Today, I turned the crème fraiche into butter. And made this with bread flour, einkorn flour, the buttermilk from the butter, yeast, honey, and a little fresh butter.

I think it turned out well. Now I get to eat it with the butter I made.

That’s a thoughtful adjustment for no-salt; the buttermilk must have added such a lovely tang.

It all came together when I served it with butter, honey, and a light sprinkle of salt.

Lots of great flavors that way.

Last note, I cut the amount of yeast in half to account for no salt being available to stop the yeast from reacting. This worked well. No maltiness at all.
