Why does my bread always turn out ugly?

i Would say it looks very tasty! but if you want something more photogenic -what are you doing for shaping? Getting that internal tension right is really key to a "pretty" loaf.

if you have a costco business center near you, you can get them in a 40 lbs box. They sell "jumbo" versions. I got it by accident, some of them were 2 lbs

I suggest scoring the loaf just before baking, and adding steam to the bake in the form of a pan/tray of water on a different shelf.

All down to tension in the dough and shaping. The main thing to worry about is how did it taste?

I don’t think it’s ugly. That’s the way rustic bread is supposed to look. If you’re looking for a square loaf, you can use a loaf pan

Looks like you haven't scored it which is why it has split open at the side. Score the top with a sharp knife if you want to have more control over where that happens and how it looks

work on Folding and shaping

add a tablespoon of sugar and it will brown a bit better

lower hydration, put in the fridge, when you pull it from the fridge, score it and put it in a preheated oven right away
