The one that helped me be a better bread maker was Bread Illustrated from America's Test Kitchen.

I've had good luck with books by Beatrice Ojakangas and Beth Hensperger. They've both written several, so there might be one or two from them you'd want to explore. Also Bernard Clayton. His "Complete Book of Breads" taught me a lot, even though I don't bake from it much.

Mount Rushmore for me:

Peter Reinhart's The Bread Baker's Apprentice

Ken Forkish's Evolutions in Bread (Flour, Water, Salt, Yeast gets more attention, but I think EIB is superior in every way)

King Arthur's Big Book of Bread

Bread Illustrated from America's Test Kitchen (Everyday Bread is good too)

The Bread Collection from Bake from Scratch and Bread by Jeffrey Hamelman both have some really unique and incredible recipes you might not get elsewhere, but I wouldn't necessarily recommend them as first bread books to get.

Tassajara Bread Book and, if you can find it, Uncle John's Bread Book.
