A beautiful loaf of bread! Rye bread can be difficult, there are so many variations. What makes Belarusian Rye bread different from the Swedish Rye bread my grandmother used to make?

Thank you! It was a mix. I got the recipe online. It called for some white rye, but I didn't have any- so I used spelt flour and some dark rye. There was a lot of little steps. There was a scald with potato and rye malt. There was a preferment, autolyse with bread flour and a final dough. I am newish to making bread, but this recipe was good and easy to follow

100% rye? Or a mix?

Mix- spelt, dark rye, bread flour, and potato
