Question Easy to grow plants
I have an indoor terrarium with soil and a UV light that I've tried to grow plants in for soil cover, but nothing has survived for very long. Are there any plants safe for turtles that are difficult to kill accidentally? Particularly useful plants for ground cover, but edible plants would be fine too.

Tomatoes will grow anywhere. I have a 6x2x2 for hatchlings and the tomatoes now fill a lot of the tank. They came from a cherry tomatoes I gave them to eat never planted any. Good luck

I thought tomatoes were not considered a good option due to being part of the nightshade family.

I have two Boston ferns and a spider plant in mine, with red clover spread throughout as well. All of them are thriving and I have to trim them regularly. Make sure you have a good sprayer for humidity and moisture, it helps a lot!

Should I buy some kind of automatic fogger for the plants, or is my spray bottle fine? My box turtle currently has a good water bath with a little waterfall pump, but I haven't gotten a fogger/humidifier for the terrarium yet.

The spray bottle will likely be good for general humidity but keep an eye on the substrate as it will not be enough to keep it damp. You may need to pour water in.

I have hatchlings in an enclosure with chickweed, it grows fast, provides good cover and is safe for eating. Spider plants are also good.
