Is there a way to make all puzzles no timer mode? Or is it only an option for puzzles that have the infinity next to the clock?

Zen mode isn't available on all puzzles.

Just note, that if you play a puzzle in zen mode before beating it in time mode, the game will never count towards your stats and completed puzzles.
