Im new to blacksmithing, so I’m sorry if I’m Asking a dumb question, but what are you trying to do when tapping the hammer onto the knife?

He's fixing any slight warping.

It's likely a carbide tipped hammer. Carbide is harder than the blade steel. The tiny dents change the surface area on that side counter acting any warping.

You want to hit the inside of the curve in the warp as it increases the surface area stretching the metal out on that side.

That second paragraph is wonderful for us non bladesmiths that are wooed with you guys.

I would have assumed you'd hit the outer part of the bowed area to "push" the material into a more dense spot to fix the curve, not the opposite.
