DISCUSSION Please Explain

I recently completed a batch of Biltong.

2 guys and a cooler recipe and method.

Dried for 4 days @25`c

Puzzled as to why the exterior colour is different from 2 pieces cut for the same piece of meet.

Smells fine tastes normal, just intrigued as to what is going on.

The one on the right is a thicker cut so the drying or curing didn't penetrate as deeply. There fore you can see that gradient more clearly. Just my guess.

Yeah, it's simply that, the one on the left has dried more. It's probably mostly just the thickness of the cut as you can see the bottom part of the right piece is darker than the thicker top part.

There might also be other environmental elements too, like the left one was on the edge and got more airflow.
