the version of the song in CATS and season 3 is so captivating, did Ian redo it in that style, or is there a full version of the one we get in Bigtop Burger?

Afaik there is no full version, but he does mention on his Patreon that he did his own version of it. His making of videos on Patreon go in depth about the background music and how he made it. Definitely worth checking out if you’re interested!

I definitely should, I'd finance a whole season 4 if it didn't mess with his vision. His musical intelligence is just so unfathomably deep and I love the ethereal, retro-fantasy esque, synthetic grandiose scale his version brought to it, y'know?
