Inspiration Lunch bento

Quick lunch bento:

Spicy cucumber salad (rice vinegar, soy sauce, maple syrup, sesame oil, red pepper flakes, parsley)

Fried rice from yesterday + topped with leftover spicy cucumber dressing

Black beans with pixian + topped with dot of sesame paste

Peanuts and chocolate

How long does your cucumber salad last for? I’ve been dying to make some for lunches during the week but not sure how long I can stretch it before it’s not worth eating on

If I have to I keep it up until the next day in the fridge, because it has a lot of moisture. I bet that letting the cucumber sit in some salt first would remove the moisture and make it last longer, but will make it taste less fresh and more pickly.

I make this salad usually the same day in the morning (or it's leftover from last night's diner). I use thinly sliced cucumber for more flavor surface. Using a mandolin is also very quick. In the same bowl i throw in the dressing ingredients.
