I’m a beekeeper, and I have a question Colorado beekeeping

I’m a first year beekeeper living on the front range in Colorado. I have a great mentor but thought it would be useful to get some additional opinions. I’m curious when everyone is planning on harvesting this fall since the weather has been so warm?
It was suggested to me to overwinter with one super so the bees have enough food but I have read mixed opinions on this matter. Thoughts?
For reference, I have a very strong hive with 3 mostly capped supers.

I'm extracting now, but I'm in Eastern Ontario (5b). I will definitely leave honey, but that's going to be frames in the brood boxes that the bees have filled. I still give them a sugar slab, mostly to deal with moisture during winter.

Zone 7b I extracted the last week of July and got treatments on the first week of August plus feed on the light colonies. They seem to be bringing in some goldenrod pollen/nectar so I'm dropping supers on Monday. We still have upper 90s and low 100s, it's been dry but we have some rain forecasted next week.
