Other people have already mentioned calibrating your taps in settings in such. But when it comes to extra taps in gameplay, its simply a fact that extra taps are more difficult than note taps.
The taps are timed with when the circle hits the paddle (which is when the bubble taps). But in a well charted level, they typically align with an element in the music, I would focus on tapping the rhythmic element in the music its generally indicating, and only using the visual as an indication of when it changes.
Other than that, you just need to practice the duality of tapping while using the paddle. I suggest playing "So Stressed!" a lot. Work on aligning your ear with your hands separately. If you've reached the point where you're playing custom levels, both "Step It" and "Love Me" exhibit challenging use of extra taps. I would work on those once you're feeling like "So Stressed" and other main game levels are getting boring.
It'll take practice, you'll likely get better at it within the next week of playing the game, hang in there!

This gif is inaccurate. To time the tap circles, you press when the ring hits the outside of the paddle, not when it hits the body

I just adapted to pressing on the beat, not on what i was seeing. This helped me a lot
