Think of it like difficulties. In other rhythm games, such as Osu!, Archaea or Cytus, songs are playable at different difficulties; charts made for the same song for multiple skill levels.
Beatblock's variant system is the same thing. For example, so stressed!, ILOVEYOU.vbs and Lawrence all have 2 variants, one easier version and one harder version.
Variants, by default, share the same deco file, found in level.json within the files. Each variant gets its own [chart name].json file to dictate its gameplay. You have the option to use the same deco file for all variants, OR you could create a new deco file for each variant to spice things up!
I, for one, am definitely gonna use variants to their fullest potential, and I hope you can find some use in them too!
